I love snacking and I absolutely love sweet treats. Combining the two and making them healthy is like a dream come true.  Enter the figgy energy bites.  We served these little fig and coconut delectable bites at the Women’s Yoga Sailing Retreat and they were a huge hit.  Here is the recipe so you can make them and share them with your loved ones. I like to keep them in the fridge for a quick, breakfast or as a quick way to satisfy my sweet tooth.  Enjoy them before or after yoga for some added energy.

Why figs and coconut?

Figs are rich in potassium, high in dietary fiber and naturally sweet like candy. Besides being absolutely delicious…unsweetened coconut is high in essential minerals like Manganese and Selenium, both important for healthy, strong, beautiful bodies. Stocking your fridge with snacks that love you back will help you nourish your body and mind with ease.

Figgy Energy Bites:

Original recipe from The Autoimmune Paleo Cookbook by Mickey Trescott and altered slightly by Sherry

Ingredients

2 c. unsulphured dried figs

2 c. shredded unsweetened coconut, divided

1/3 c. organic coconut oil, melted

2 drops Wild Orange doTERRA essential oil or 2Tbsp orange zest

3 drops Cinnamon Bark doTERRA essential oil or 1/4 tsp. cinnamon

Pinch of sea salt

A tasty snack before or after yoga

Make it happen

~Place the figs, 1-1/2 c. of the shredded coconut, coconut oil, orange oil (or orange zest), cinnamon oil (or cinnamon), and salt in a food processor and pulse on and off until a thick paste forms (you may have to stop and scrape the sides of your food processor a few times.)
~Form into 1″ balls, then roll them in the reserved 1/2 c. of shredded coconut.
~Refrigerate for at least 30 minutes to let the coconut oil set.
